My client, The Castle Inn Hotel, Bramber, is a family owned village free house with letting rooms.
It has 24 cover, adult only dining room and an 80 cover family dining room, with dining space throughout the bars and a large beer garden.
The Castle Inn Hotel is looking for a well organised and creative Chef to take charge of the kitchen and play a key role in the further development of this food driven business.
The Castle Inn Hotel currently offers lunch and dinner 7 days a week; present menus are Modern British and are a blend of pub classics, bar snacks and daily specials.
There is plenty of scope for growth and new ideas and the owners are keen to find a self-motivated chef with the flair and passion to build the inns reputation as a quality food driven destination venue. The inn is recognised by the AA for its 3* accommodation.
You will be responsible for all aspects of the day to day running of the kitchen including all food production, menu design and implementation, ordering, stock control, hygiene, HACCP and kitchen rotas.
You will be expected to manage the kitchen budget, train your team and improve the kitchen performance in all areas.
You must have previous experience in a similar fresh food environment with a proven track record in kitchen management and be comfortable working closely with the hands-on owners.
You must be an ambitious and enthusiastic Chef with a real desire to progress as this will be as close to running your own business as it possibly could be without the financial input and risk.
You must be an experienced and well trained catering professional, who understands that a kitchen with flawless food hygiene standards and organisational systems will produce better food, better chefs and better profits.
You MUST be super clean, and work to the highest hygiene standards. The owners will accept nothing less than a spotlessly clean kitchen and food storage environment. Record keeping of food temperatures, fridge and freezer temperatures must be immaculate.
You need to be mentality strong as well as physically capable to cope with busy periods.
Fresh, home-made food is imperative.
The Castle Inn is a non-smoking environment and staff are not permitted to smoke during shifts.
Wage is negotiable but governed by ability – plus holiday pay, tips and bonus.
